Chicken Francese Recipe


Chicken Francese

You will need:
1 ½ lbs boneless skinless chicken cutlets (approx 4 breasts)
Flour for dredging
Egg mixture: 4 eggs plus 3 Tbsp. water
~¼ c. EVOO
½  lemon, sliced thinly
1 lemon, juiced
1 c. white wine
2 c. chicken broth
3 Tbsp. butter rolled in flour
Parsley for garnish

Directions:

-Pound 4 boneless chicken breasts thin. (Scaloppini style)

-Heat EVOO in skillet.

-Dredge chicken in flour and season with salt and pepper, then dredge in egg mixture.

-Fry cutlets for 2 min. on each side until golden.

-Remove cutlets onto a separate plate (do not cover).

-Toss the lemon slices into the pan and cook for 1-2 min until golden and fragrant, then remove.

-Add the wine, broth and lemon juice, and scrape up all the bits from the pan.

-Simmer for 5 min. to reduce slightly.

-add the butter slices to the skillet to thicken.  (add extra ‘Wondra’ flour to thicken slightly, if necessary)

Reduce heat and add chicken back to pan.  Simmer for 2 min until heated through again, and covered in sauce.
Serve over linguine immediately and season with salt and pepper and garnish with parsley and cooked (or fresh) lemon slices.

Homemade Bubble Recipe

Run out of bubbles?  Make your own...gentle and tear free...
mix 1 part children's shampoo with 4 parts water.

Re-Use Foaming Soap Dispensers...Save lots of money on kids shampoo & body wash...

Take those used Foam Soap Dispensers and refill them for the bath!  My favorite dispensers are the Target Up & Up Foaming Soap bottles.  They have a wide base.  But here is what the Bath & Body Works soap dispensers look like. 
Here's how....rinse out and fill with 1/4 of your favorite bath soap- I use Johnson & Johnson's Lavender Baby Wash...then fill the rest of the bottle up with warm water.  Gently shake to blend.  Now you have foaming soap for the bath...it's gentler on kids skin and easily washes off. And if you have a child like mine who loves to empty a bottle of body wash in each bath, then this is the way to go.  It makes great bubbles too and won't irritate because you are using so much less.  I also use this for shampoo. I fill the empty dispenser 1/4 of the way with the Suave kids shampoo, fill the rest of the way with water, and my child can wash her hair easily without soap residue...and without using 1/2 the bottle up!

Frustrated with trying to clear your child's stuffy or runny nose?  Well, this battery operated 'boogie-sucker' is the best...recommended by my sister in law, it plays music so the child is distracted.  It's a must-have in my book for children who can't blow their nose by themselves.

Italian Shredded Beef - Quick & Easy Crock Pot Recipe!

Italian Shredded Beef (similar to Philly Cheese Steak)

From the Kitchen of: Val 
Serves approx 4-5 adults (depending on how hungry they are!)

1 ½ lbs. (approx) stew meat cubes
½  a jar of Pepperoncini peppers and about ¼ cup of the juice
1 can Beef Consomme
1 Tbsp. Italian Spices
3 cloves garlic-chopped

Place all ingredients into crock pot and set on High for approx. 5 hours. Or on Low for 7-8 hours.  Remove meat from juices and shred. Place back into crock pot with juices.
Place on hoagie rolls and top with favorite shredded cheese and bake until cheese is melted.  Also great with sautéed peppers/onions/mushrooms.  Freezes well.

The "Floppy Seat" cover is a must have in my book.  It is soft and cushy and fits all Shopping Carts...even the Large ones at Sams Club / Costco / BJ's Wholesale stores.  My first baby had fallen asleep in this many a times while I was shopping at Super Walmart. Backpack Diaper Bags...the way to go-Hands Free!

I have this diaper bag and I love it.  Plenty of room for everything with its pockets inside and outside. One side pocket is even lined to use as a cooler compartment for bottles/sippie cups.  I love that I am able to have both hands free. With my first baby, I had an over-the-shoulder / one strap traditional diaper bag.  I hated the strap sliding down off my shoulder constantly.
