my daughter LOVES watching the sky...we call her the 'weather girl'.  She is always looking up and informing us when storm clouds are approaching.  We went to our local library and were very disappointed in the cloud description books they had.  This site is great. Check it out!

Crispy Zucchini Chips


These crispy slices of zucchini are fabulous! My cousin made them this weekend...she came up with the recipe! Healthy, yet so yummy!


Crispy zucchini chips
From the Kitchen of:  cousin Laura

Fresh zucchini, sliced into very thin circles
Crumb Mixture:
¼ c. plain bread crumbs or Panko style crumbs
½ c. crushed Rice Krispies cereal
~1 tsp. herbs de Provence
(optional-1 Tbsp. grated parmesan cheese)

Slice zucchini very thin. (no peeling necessary)
Dip in milk and dredge in crumb mixture.
Place on wire rack, then on a baking sheet.
Bake at 400 for 20-30 min.
(optional- in the last 10 min of baking…you may drizzle olive oil over slices for crispier texture)
